6 large eggs
1 1/2 cups heavy cream, half-and-half, or milk
2 tablespoons pure vanilla extract
1/2 teaspoon ground cinnamon
Pinch of ground nutmeg
Pinch of salt
6 slices bread
4 tablespoons unsalted butter
4 tablespoons vegetable oil
Pure maple syrup, for serving (optional)

Step 1
Whisk together eggs, cream, vanilla, cinnamon, nutmeg, and salt in a medium bowl; set aside.

Step 2
Place bread in a shallow baking dish large enough to hold bread slices in a single layer. Pour egg mixture over bread; soak 10 minutes. Turn slices over; soak until soaked through, about 10 minutes more.

Step 3
Preheat oven to 250 degrees. Place a wire rack on a baking sheet, and set aside. Heat 2 tablespoons butter and 2 tablespoons vegetable oil in a skillet over medium heat. Fry half the bread slices until golden brown, 2 to 3 minutes per side. Transfer to wire rack; place in oven while cooking remaining bread. Wipe skillet, and repeat with remaining butter, oil, and bread. Keep in oven until ready to serve. Serve warm with pure maple syrup (if desired) & a fresh glass of orange juice.

Skinny Chocolate Parfaits – Delicious!

Screen Shot 2014-02-08 at 7.46.53 am

Servings:• Size: 1/3 cup pudding, 3 tbsp Truwhip • Old Pts: 5 pts • Points+: 6 pts
Calories: 217 • Fat: 10 g • Protein: 5 g • Carb: 30.5 g • Fiber: 1.5 g • Sugar: 22.5 g
Sodium: 73 mg

  • 3 cups fat free milk
  • 2 1/2 tbsp sugar
  • 1-1/2 tsp vanilla extract
  • 2 tbsp cornstarch
  • 1 large egg yolk
  • 4 oz (4 squares) Semi-Sweet Baking Chocolate Squares
  • 18 tbsp TruWhip (Don’t forget to use a CommonKindness TruWhip coupon)

In a medium non-stick saucepan, combine milk, sugar, and cornstarch; whisk well and simmer on medium-low heat, whisking constantly until mixture has thickened, about 15 to 20 minutes.

In a medium bowl whisk egg yolk.  Slowly add about a cup of the hot milk mixture to the yolk, whisking in about a tablespoon at a time to temper the egg so the egg doesn’t cook. Once the egg is tempered, whisk into the saucepan with the milk mixture.

Melt the chocolate squares in the microwave 20 seconds at a time, up to a minute, stirring in between until the chocolate is melted.  Pour melted chocolate into the sauce pan, whisk well.

Add vanilla; simmer on low for 15 minutes, whisking constantly.
Transfer the chocolate pudding into a large bowl, cover with wax paper, touching the pudding so that it doesn’t allow a film to settle on top. Refrigerate for at least two hours or overnight.  Makes about 2 3/4 cups.

When cold, place 3 tbsp pudding into each glass, then add 2 tbsp of truwhip in each, then 2 tbsp more pudding and top with a dollop of TruWhip.

Basic Pie Crust Recipe

The following recipe makes enough dough for two 9-inch Apple Pumpkin Pies.

  • 2 ½ cups all-purpose flour, spooned and leveled
  • 1 tsp. salt
  • 1 tsp. Alter Eco sugar
  • 16 tbsp. (2 sticks) cold Clover Stornetta unsalted butter, cut into pieces¼  to ½  cup ice water

This recipe makes 2 disks for a single pie with a top and bottom crust or two pies without a top crust.

  1. In a food processor, combine flour, salt, and sugar; pulse to combine.
  2. Add butter; pulse until mixture resembles coarse meal, with just a few pea-size pieces of butter remaining.
  3. Sprinkle with ¼ cup ice water.
  4. Pulse until dough is crumbly but holds together when squeezed with fingers (if necessary, add up to ¼ cup more water, 1 tbsp. at a time). To help ensure a flaky crust, do not over-process.
  5. Transfer half of dough (still crumbly) onto a piece of plastic wrap.
  6. Form dough into a disk ¾ inch thick; wrap tightly in plastic.
  7. Refrigerate until firm, at least 1 hour, and up to 3 days. Repeat with remaining dough.
  8. Line pie plate with crust and flute edges, if desired.
  9. Refrigerate crust for 40 minutes OR freeze for 20 minutes.
  10. Place aluminum foil on bottom of crust; weigh foil down with pie weights or dry beans.
  11. Cover the rest of the pie crust with foil.
  12. Bake at 375°F for 25 minutes.
  13. Remove from oven and cool.
  14. Unwrap crust and add filling.
  15. Bake as recipe directs.
